The Pils Paradox: Can Mash Temperature Change Everything?
At first glance they look identical. Crisp, pale, and unmistakably Pilsner. But one of these beers was mashed for maximum fermentability, while the other was mashed hotter to leave more body and less alcohol.
This month we’re putting brewing science to the test. March 16, 2026 at 7:00pm at Brewery Outré (567 E. Ransom St. Kalamazoo, MI 49007).
Jason brewed two German Pilsners using different mash temperatures. One finished at about 5% ABV, the other at 3.6% ABV. The grain bill, hops, yeast, and process stayed the same. Only the mash temperature changed.
Now the question is simple.
Can you actually taste the difference?
We’ll run a triangle test, a classic sensory method used in professional brewing. You’ll receive three samples. Two are the same beer. One is different.
Your job is to figure out which one doesn’t belong.
Expect discussion about:
- Mash temperature and fermentability.
- Body, attenuation, and alcohol balance.
- Sensory perception and blind tasting.
- What brewers think they taste versus what they actually taste.
- It’s part experiment, part tasting, and part brewing nerd fun.
